Shrimp Tarts


2 lbs Philly's Premium Wild Texas Shrimp, peeled, deveined and boiled
2/3 cup green onion, finely chopped
1/2 cup fresh parsley, finely chopped
2/3 cup mayonnaise
2 tsp capers
1 tsp lemon juice

1 tsp lemon juice
1/2 tsp salt
1/4 tsp ground red pepper
1 clove garlic, minced
Phyllo mini tart shells
Garnish: thin diagonal slices of green onion


Preheat oven to 400 degrees F. Peel, devein shrimp and pat dry with paper towels. Place shrimp on a sheet pan pour olive oil over the shrimp and add salt, pepper and toss. Spread them in 1 layer. Roast for 8 to 10 minutes, just until pink and firm. Set aside to cool and then coarsely chop. Combine chopped shrimp, green onions and the next 7 ingredients in a large bowl. Evenly spoon mixture into tart shells. Garnish with green onion slices. Yield: 3 dozen
