Shrimp Greek Skillet

Ingredients:
Oven Safe Skillet
2 Tbsp Olive Oil
½ Chopped Red Onion
4 Minced Garlic Cloves
1.5 Tsp Dried Oregano
1 Pinch Red Pepper Flakes
2 Cans Diced Tomatoes, drain one
4 Cups Baby Spinach
1 Cup Kalamata Olives, cut into thirds
½ Lemon Zest
3 oz Tomato Basil Feta Cheese
1 Juiced Lemon
Salt and Pepper
Fresh oregano leaves for garnish
Preparation:
1. Preheat oven to 400 degrees Fahrenheit.
2. Pour about 2 tbsp of olive oil into the skillet over medium heat.
3. Once that gets hot, add in the onions.
4. Cook the onions for about 3 minutes, or until they’re soft.
5. Add in the garlic, dried oregano, and a pinch of red pepper flakes.
6. Cook for about 2 minutes.
7. Add the diced tomatoes with the can juice and reduce the heat to low.
8. Add the baby spinach and kalamata olives.
9. Add salt and pepper to taste and stir well until it simmers.
10. Spread the Philly shrimp on top evenly.
11. Sprinkle the feta cheese on top of the shrimp, then pour in the lemon juice.
12. Put the oven-safe skillet in the over for about 12-14 minutes, until the shrimp are cooked.
13. Optional: Put the oven on broil high for 1-2 minutes.
14. Add lemon zest and serve on white rice or with pita bread.
