Pineapple Shrimp Skewers
Ingredients:
          
        Grilled Shrimp:
          
        1 Pound of Philly Shrimp
              
              
              
            2 Slices of Pineapple, cut into 1/2 inch pieces
              
              
              
            Coconut and Pineapple Sweet Chili Sauce:
          
        3 Tbsp Coconut Milk
              
              
              
            3 Tbsp Pineapple Sweet Chili Sauce
              
              
              
            1 Tsp Sriracha
              
              
              
            Preparation:
          
        Coconut and Pineapple Sweet Chili Sauce:
          
        1. Mix everything
              
              
              
            Grilled Shrimp:
          
        1. Skewer the shrimp and pineapple and brush half of the sweet chili sauce on top.
              
              
              
            2. Grill over medium-high heat until cooked, about 2-3 minutes per side.
              
              
              
            3. Add the rest of the sauce to the shrimp or use it as a dip.
              
              
              
            4. Optional: Place on top of your favorite rice or quinoa.
