Crab Stuffed Shrimp
Ingredients:
          
        Large Philly Tail-On Shrimp, peeled & deveined
              
              
              
            1 lb Lump Crab Meat
              
              
              
            1 Cup Breadcrumbs
              
              
              
            2 Cloves Minced Garlic
              
              
              
            4 Sliced Scallions
              
              
              
            ¼ Cup Chopped Parsley
              
              
              
            ¾ Cup Mayonnaise
              
              
              
            2 Tbsp Dijon Mustard
              
              
              
            ½ Cup Panko Breadcrumbs
              
              
              
            2 Tbsp Melted Butter
              
              
              
            Salt and Pepper to taste
              
              
              
            Lemons
              
              
              
            Preparation:
          
        1. Butterfly your shrimp.
              
              
              
            2. Preheat your oven to 300 degrees Fahrenheit.
              
              
              
            3. To make the crab stuffing: In a large mixing bowl, mix together the lump crab meat, breadcrumbs, lemon zest & juice, minced garlic, scallions, chopped parsley, mayonnaise, dijon mustard and salt & pepper.
              
              
              
            4. Line a baking tray with tin foil and spread out the butterflied shrimp on it.
              
              
              
            5. Flatten out the shrimp and, with a spoon, scoop the crab mixture on top of each shrimp.
              
              
              
            6. Sprinkle a pinch of the panko breadcrumbs on top of each shrimp.
              
              
              
            7. Drizzle the butter on top of each shrimp.
              
              
              
            8. Bake in the oven for 15-18 minutes, checking to make sure the shrimp does not overcook.
              
              
              
            9. Set your oven to broil high and when it’s ready, put the shrimp back in the oven for about 4-5 minutes.
              
              
              
            10. Squeeze lemon on top and serve!
