Grilled shrimp boil packet

Ingredients


1lb small red potatoes sliced into 1/4in slices

2 ears of corn cut into 1inch disk

6 oz of cajun sausage link sliced into 1/4 inch slices

1lb Philly Wild Premium (size 21/25)

6 tablespoons butter 

2 tsp Thyme 


 

2 tablespoons lemon juice 

2 cloves garlic roughly chopped

2 teaspoons cajun seasoning 

2 tablespoons parsley




Preparation

1.) Preheat gas grill over medium - high heat to about 450F.  Cut 8 sheets of 12 by 14-inch aluminum foil. Use two sheets of foil per packet. Divide the potatoes among each of the four double lined foil sheets (followed by corn, sausage and shrimp.

2.) Melt butter, then stir in lemon thyme and garlic. Divide butter mixture among the packets. Sprinkle each with Cajun seasoning.  Next you will folding over foil to seal your packet. Place foil packets on grill and let cook for about 15 minutes or until potatoes are tender and shrimp has cooked through.

3.) Serve warm and garnish with parsley.
