Grilled Coconut & Pineapple Shrimp

Ingredients

 For the Grilled Shrimp:

1 lb (shrimp)

2 slices pineapple cut into 1/2 inch pieces.


For the Coconut and Pineapple Sweet Chili Sauce:

3 tablespoons coconut milk

3 tablespoons pineapple sweet chili sauce

1 teaspoon sriracha





 

 

 

 





 

 

Preparation

 For the Coconut and Pineapple Sweet Chili Sauce:

1. Mix everything

For the Grilled Shrimp

1. Skewer the shrimp and pineapple and brush half of the sweet chili sauce on top.

2. Grill over medium-high heat until cooked, about 2-3 minutes per side.grill over medium-high heat until cooked, about 2-3 minutes per side.

3. Add the rest of the sauce to the shrimp or use it as a dip.


Optional: Place on top of your favorite rice or quinoa
